Chocolate Orange Muffins
Here is a good recipe, easy to make and that will delight amateurs with chocolate muffins.

Ingredients:

400g flour
250g sugar
2 cc baking powder
300ml orange juice (I use 200ml of orange + 100ml of milk)
180ml oil (sunflower or vegetable)
2 medium eggs
1 grated orange zest
150 to 300g chocolate chips


Begin by reheating your oven to 180° (th 6).

In a mixing bowl, mix the sifted flour, baking powder and sugar.

In a bowl, rapidly beat the eggs with the orange juice, milk and oil.  Add the orange zest (or substitute orange flavoring with the vegetable oil).

Dig a small hole in the bowl containing the dry ingredients and pour the liquid mixture into it.

Coarsely mix it with a wooden spoon, just enough for the flour to be amalgamated:  the dough should not be overworked, on the contrary, leave the lumps!

Add the chocolate chips or substitute coarsely chopped dark chocolate.

Pour the batter in the paper cup molds (in the amount of 2,5 cs per muffin, a little more if the size of the pan permits it).

Bake and let cook for around 20 min.  When they come out of the oven, turn over the mold on a plate or grill and let the muffins cool.
